Oatmeal, Banana, Almond, Coconut, and Chocolate Chip Muffins

Need to eat on the go? Make these delicious muffins which include oatmeal, bananas, and chocolate.

Eat for breakfast, lunch, or an afternoon snack.

Ingredients:

  • 3 ripe Bananas, mashed
  • 3 cups Old-Fashioned Oats
  • 1-1/2 cups Milk
  • 2 large Eggs
  • 3 tablespoons Brown Sugar
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Baking Powder
  • 1 tsp Vanilla Extract
  • 1/2 teaspoon Salt
  • 1/4 cup Almonds, chopped
  • 1/2 cup Chocolate Chips
  • 1/2 cup Shredded Coconut

Directions:

  1. Preheat oven to 350 degrees. Coat a muffin tin with cooking spray or use liners.
  2. In a large mixing bowl, combine bananas, oats, milk, eggs, brown sugar, vegetable oil, vanilla, and salt until well blended.
  3. Add almonds, chocolate chips, and coconut. Mix well.
  4. Scoop mixture into 12 muffin cups.
  5. Bake 30-35 minutes until tops are golden.
  6. Store in an airtight container.
