Need to eat on the go? Make these delicious muffins which include oatmeal, bananas, and chocolate.
Eat for breakfast, lunch, or an afternoon snack.
Ingredients:
- 3 ripe Bananas, mashed
- 3 cups Old-Fashioned Oats
- 1-1/2 cups Milk
- 2 large Eggs
- 3 tablespoons Brown Sugar
- 2 tablespoons Vegetable Oil
- 1 teaspoon Baking Powder
- 1 tsp Vanilla Extract
- 1/2 teaspoon Salt
- 1/4 cup Almonds, chopped
- 1/2 cup Chocolate Chips
- 1/2 cup Shredded Coconut
Directions:
- Preheat oven to 350 degrees. Coat a muffin tin with cooking spray or use liners.
- In a large mixing bowl, combine bananas, oats, milk, eggs, brown sugar, vegetable oil, vanilla, and salt until well blended.
- Add almonds, chocolate chips, and coconut. Mix well.
- Scoop mixture into 12 muffin cups.
- Bake 30-35 minutes until tops are golden.
- Store in an airtight container.
