There is something about combining pasta and peanuts that makes me a happy person. Will this recipe make you happy as well?
Ingredients:
- 2 tablespoons Olive Oil
- 1 teaspoon Crushed Red Pepper Flakes
- 4 Green Onions, chopped
- 1 Red Bell Pepper, cut into thin strips
- 2 tablespoons packed Brown Sugar
- 1/4 cup Rice Wine Vinegar
- 3 tablespoons Soy Sauce
- 1 teaspoon. Sesame Oil
- 1/2 teaspoon Ginger
- 1 cup Chunky Peanut Butter
- 1 cup Chicken Broth
- 1 pound Fettuccine, cooked
- 1/2 cup chopped Peanuts
Directions:
- Heat oil in medium skillet over low heat until hot.
- Add red pepper flakes and cook 1 minute. Increase heat to medium.
- Add green onions and red pepper. Sauté briefly. Remove from heat.
- Stir in brown sugar, vinegar, soy sauce, sesame oil, and ginger. Mix thoroughly.
- Return skillet to low heat. Add peanut butter, 1/4 cup at a time, stirring constantly.
- Add broth, stirring constantly. Heat until hot.
- Place fettuccine in large shallow bowl. Add peanut butter mixture, and toss to combine.
- Sprinkle with chopped peanuts and serve.
Serve with a side salad for a delish meal. Enjoy!
