Peanut Pasta

There is something about combining pasta and peanuts that makes me a happy person. Will this recipe make you happy as well?

Ingredients:

  • 2 tablespoons Olive Oil
  • 1 teaspoon Crushed Red Pepper Flakes
  • 4 Green Onions, chopped
  • 1 Red Bell Pepper, cut into thin strips
  • 2 tablespoons packed Brown Sugar
  • 1/4 cup Rice Wine Vinegar
  • 3 tablespoons Soy Sauce
  • 1 teaspoon. Sesame Oil
  • 1/2 teaspoon Ginger
  • 1 cup Chunky Peanut Butter
  • 1 cup Chicken Broth
  • 1 pound Fettuccine, cooked
  • 1/2 cup chopped Peanuts

Directions:

  1. Heat oil in medium skillet over low heat until hot.
  2. Add red pepper flakes and cook 1 minute. Increase heat to medium.
  3. Add green onions and red pepper. Sauté briefly. Remove from heat.
  4. Stir in brown sugar, vinegar, soy sauce, sesame oil, and ginger. Mix thoroughly.
  5. Return skillet to low heat. Add peanut butter, 1/4 cup at a time, stirring constantly.
  6. Add broth, stirring constantly.  Heat until hot.
  7. Place fettuccine in large shallow bowl. Add peanut butter mixture, and toss to combine.
  8. Sprinkle with chopped peanuts and serve.

Serve with a side salad for a delish meal. Enjoy!
