Szechuan Noodle Salad

The first time I made this delicious dish was in January 1996. How do I know that? I have tons of recipes, and to easily know whether I’ve made the recipe before, I always write the month and year I make the dish in the upper right corner of the recipe.

This main dish recipe combines noodles, chicken, and vegetables with oriental flavors.

Ingredients: (Serves 4)

  • 4 (3 oz.) packages Ramen Noodles (do not use seasoning packet)
  • 6 tablespoons Vegetable Oil
  • 6 tablespoons Honey
  • 2 tablespoons Oriental Sesame Oil
  • 2 tablespoons Rice Vinegar
  • 2 tablespoons Soy Sauce
  • 2 teaspoons Cayenne Pepper
  • 3 cups shredded cooked Chicken
  • 4 Green Onions, thinly sliced
  • 4 Carrots, shredded
  • 1 Red Bell Pepper, chopped
  • 1 cup Dry-Roasted Peanuts

Directions:

  1. Cook noodles according to package directions, then drain.
  2. Meanwhile, in a small bowl, combine oil, honey, sesame oil, vinegar, soy sauce, and pepper. Blend well.
  3. In a large bowl, combine cooked noodles, chicken, onions, carrots, bell pepper, and peanuts. Pour dressing over salad and toss to mix. Divide into four serving bowls.
