The first time I made this delicious dish was in January 1996. How do I know that? I have tons of recipes, and to easily know whether I’ve made the recipe before, I always write the month and year I make the dish in the upper right corner of the recipe.
This main dish recipe combines noodles, chicken, and vegetables with oriental flavors.
Ingredients: (Serves 4)
- 4 (3 oz.) packages Ramen Noodles (do not use seasoning packet)
- 6 tablespoons Vegetable Oil
- 6 tablespoons Honey
- 2 tablespoons Oriental Sesame Oil
- 2 tablespoons Rice Vinegar
- 2 tablespoons Soy Sauce
- 2 teaspoons Cayenne Pepper
- 3 cups shredded cooked Chicken
- 4 Green Onions, thinly sliced
- 4 Carrots, shredded
- 1 Red Bell Pepper, chopped
- 1 cup Dry-Roasted Peanuts
Directions:
- Cook noodles according to package directions, then drain.
- Meanwhile, in a small bowl, combine oil, honey, sesame oil, vinegar, soy sauce, and pepper. Blend well.
- In a large bowl, combine cooked noodles, chicken, onions, carrots, bell pepper, and peanuts. Pour dressing over salad and toss to mix. Divide into four serving bowls.
